Tzatziki Sauce (Creole Style)
Yield - 1 Quart
Chef's Comments
This amount of sauce could serve about 50 people. But as a chef/caterer I would suggest making a double batch... You are going to want to take some home!!
Ingredients
1 QUART GREEK YOGURT (See Chef's Notes below)
1/4 CUP LEMON JUICE
2 TBSP EXTRA VIRGIN OLIVE OIL
1 TBSP RED PEPPER FLAKES
1/4 CUP CUCUMBER (Peeled, deseeded and Puréed)
1 TBSP FRESH GARLIC (Puréed)
1 TSP WHITE PEPPER
Garnish and Plate Ingredients
LOT Sprigs of FRESH SWEET BASIL and MINT LEAVES
1 MEDIUM SIZED CUCUMBER (Peeled, deseeded, and julienned into 3" long sticks)
1/2 CUP KALAMATA OLIVES (Pitted)
Method
In a stainless steel bowl combine all ingredients.
Plate Presentation
Serve in a colorful bowl with
tableside olive oil, herbs, cucumber sticks and olives.
The normal dipping sauce does not contain any red pepper flakes or white pepper. That gives it a little spicier flavor!
