Dates Stuffed with Praline Pecan Bacon
Yield - 12 Stuffed Date Dessert Hors d'oeuvers
Ingredients
24 MEDJOOL DATES
1/2 CUP CREOLE COTTAGE CHEESE (Divided)
1/2 CUP PRALINE PECAN BACON (Crumbled and Divided) (See Recipe)
Presentation Ingredients
LARGE and COLORFUL PRESENTATION PLATTER
LOT STEEN'S MOLASSES
LOT CONFECTIONS SUGAR (In a Shaker)
Method
Use a paring knife and slit the dates lengthwise, then the point can be used to "pop out" the seed. Squeeze the ends of the date closer to form a boat.
Add 1/2 TSP to "Date Boat", then spread 1/2 TSP of crumbled Praline Pecan Bacon to the boat. Place the filled dates on your chosen presentation platter. At this point the platter can be filmed, refrigerated and stored for later serving.
Plate Presentation
When ready to serve, remove from refrigeration and allow to come to room temp. (About 30 mins) Nicely arrange on the platter, an sprinkle with confections sugar, drizzle on molasses, SERVE!
Also, the use of Creole Cottage Cheese is a definite improvement to just adding Phiedelipha Cream Cheese, the Creole style is less sweet and will not overpower the dish! You probably will not find Creole Cottage Cheese outside of South Louisiana, I would suggest to use regular Cottage Cheese.
A catering chef would increase this amount by many times factor as needed and store for future use.
