Hey Emile

I would like to thank you again for showing us all the real taste of New Orleans last week. We had a great time and the food was amazing!!! I have been bragging about having you at the firehouse with us and the great new techniques you taught me. I haven't had a chance to try them yet but I plan on attempting it soon.

Also, I have already checked out your website and I've gotta say that I'm very impressed with how much information you offer! I am definitely going to attempt a few of your recipes and I will let you know how it goes.

Once again Emile, it was a pleasure to meet you and I really appreciate you saying that I can pick your brain from time to time. Hopefully, we'll be back in New Orleans again soon and we get to see you again.
