Honey Dew Melon Soup
Yield - 6 Quarts
Ingredients
2 WHOLE HONEY DEW MELONS
3 BANANAS
3 CUPS SOUR CREAM
1- 24 OZ PLAIN YOGURT
4 OZ CREAM DU MENTHE (Clear)
1/2 CUP WHITE WINE
2 OZ CREAM DU BANANA
2 CUPS HEAVY WHIPPING CREAM
1 TSP DILL WEED
Method
Remove the fruit meat from the rinds, puree meat in a food processor. In a large mixing
bowl add the fruit puree and add all remaining ingredients until well mixed. Chill
Plate Presentation
Chill soup bowls. Remove small portions of the soup and place in a blender. Set blender on
high and process for 30 seconds. Add to bowls and serve.
Chef's Notes:
This is an easy soup to prepare in advance and have ready when guest arrive.
