Flaming Kasseri Cheese
Yield - 4 Appetizer Servings
Ingredients
6 ounce piece
of kasseri cheese, room temperature (Cut
about 1/4 inch thick)
1 TSP chopped fresh thyme
1/2 TSP RED PEPPER FLAKES
1 1/2 JIGGER ouzo (unsweetened anise
liqueur)
1 LIME (or possibly two)
4 PITA BREADS (Warmed)
OR a loaf of our
Pesto Stuffed Twist Bread (see
Recipe)
2 apples (Wedged and Cored)
Method
Heat a 6 inch cast iron skillet over high heat for at least 5 minutes.
Remove and place on a small wood trivet or plank.
Carefully but quickly place the slab of cheese in the center of the skillet, the cheese will immediately begin to sear, add thyme and red pepper. Quickly add Ouzo, if the pan is hot enough the liquor will ignite, if not you may have to flame the liquor with a long stemmed cigarette lighter.
BE CAREFUL!! The flames will be at least 18 inches high!! Then squeeze the lime from above and into the flaming cheese skillet. This will extinguish the cheese. The dish is done when the cheese is evenly melted throughout.
Plate Presentation
Serve Immediately with the toasted pita bread, apple wedges and a knife to
scrape out the browned cheese! And a glass of chardonnay to sip!
