Dulac Duck Yorkshire Pudding
Yield 6 - 8 Dinner Servings
Ingredients
1-1/2 CUPS DUCK GREASE (OR use the drippings from a
Standing Rib Roast)
4 CUPS FLOUR
3- 1/2 CUPS MILK
1/2 CUP SMOKED DUCK STOCK (See Recipe)
(or use Beef Stock)
2 TSP SALT
8 LARGE EGGS
Method
Add duck grease to a 2" half hotel pan and preheat convection oven to 375F with
grease and pan in oven. Mix all ingredients in a bowl and whisk until batter is foamy.
Remove pan from oven and pour batter in hot oil and bake until golden brown. At least for
20 minutes.
Alternate Method
Pudding can be cooked in a conventional oven at 400F for at least 35 minuets. Pudding
should be allowed to puff up and turn golden brown on the edges and risen center.
Plate Presentation
Pudding should be sliced like a New York pizza, served immediately after cooking, and with
Smoked Duck Demi Glaze spooned over.
