Our Suite Menu:

Throwdown Chicken and Sausage Jambalaya

Boiled Shrimp with Remoulade Sauce

New Orleans Style Red Beans with Smoked Alligator Sausage and Chicken Stock Rice

Mini Muffalettas

Smoked Boudin

New Orleans Style BBQ Shrimp with French Bread

Stuffed New Potatoes (leftovers from the Gala)

Fried Alligator on a Stick

Is this a GREAT Menu or WHAT!!!

 After the Tailgate Festival, President David Danahar asked if we could cater for him and his guests, in the Presidential Suite,...... NO Problem!!  except.... We had to get the food from the Tailgate area up to the top of the Stadium and keep it warm.  Notice the ever present snow on the hill of the picture on the left.

   Our saviors again was Aramark, they supplied a golf cart that brought our food up the hill to the back of the stadium, Again, Way Cool. Thanks.

I knew that I wouldn't have time to boil and peel 5 or so pounds of shrimp for the Suite, so on Friday morning I did so.  BAD IDEA!!! The Shrimp Cooler rats got into them!!  SOOOO, I had to do another 5 lbs..   On Saturday morning, they were half gone again!  So I did another batch of Boiled Shrimp.  I camouflaged them in a different pan this time, when I set them out in the Suite, they were the first to go!!  For all of you that asked for the Remoulade Sauce recipe, Here tis!

David told me that there would be about 25 people up there and that was about right, UNTIL, he started inviting everybody on the floor!!  HEY, but no problem!  My student helpers Chad and Brian volunteered to get more of everything.  They even found the BBQ Shrimp sauce, cooked up more shrimp and brought them up to the suite.Myself and Cecelia Danahar TWICE!!! ........ Replenished for Halftime.Myself, Cecelia and David

 I would have taken some pics if I had thought about it, but I was BEAT!! (hopefully, we can find some). BUT, I wasn't too tired to play around with Cecelia and David!

Chad, Brian and I left in the 3rd quarter, they wanted to introduce me to a local vodka called Prairie Organic.  WOW, is this stuff good!!

Don't drink too much guys! We have tomorrow's brunch to have ready for 11am.  OMG, "Brunch Impossible".
