 This lecture and demonstration was on the history of South Louisiana and how the Cajun and Creole cultures formed..... with some cooking thrown in!

I asked for some volunteers from the audience to help in the stirring and prep of a Cajun (brown) Chicken and Sausage Jambalaya.

 

I also setup a tastings of different tassos and andouilles. (sorry, no pics!)

 

NOW, This is a BEAUTIFUL Jambalaya!

On each table we left lecture evaluation cards. Out of the 41 returned, I got 36 excellents and 5 above average!!
