Peeled Smoke/Roasted GarlicAurora Catering's

 Smoked Garlic Butter
Yield 1 -1/8 Pounds

Ingredients

1/4 CUP SMOKE/ROASTED GARLIC PUR�E (See recipe)
1 LB UNSALTED BUTTER
1 TBSP FINELY CHOPPED CILANTRO (Optional)
5 -4 OZ CHILLED MONKEY DISHES

Method
Remove pur�e and butter from refrigeration (about one hour), and allow both to assume room temperature. (Do not allow butter to melt and separate).

In a medium sized mixing bowl, whisk butter and smoked garlic pur�e until well blended.

Plate Presentation
Spoon smoked garlic butter into monkey dishes and chill. Top with minced cilantro (optional).

Chef's Notes:
The quantity for garlic is highly subjective, garlic's strength can change from season to season and supplier to supplier. Use a quarter of a cup as a starting point then modify to personal taste
