Turn Around Luncheon

OK, a Turn Around is where Entergy shuts down one or more of their boilers and scrubs them out from top to bottom. And let me tell ya they are about 10 stories tall! They hire specialty contractors to do some of the work, but the plant's employees and operators get into the shut down also. Valves, gauges, plumbing everything gets checked and rechecked. They do it FAST, because it has to be online for the warming of Spring and the coming electrical demand periods of South Louisiana. Entergy likes to thank their contractors and employees with a Safety Luncheon. We have done this for many years for them, but this is the first time I thought of taking pics!
We were talking before the Luncheon that we wanted the employees and contractors to have a menu that was unique yet South Louisiana. SO, we came up with this menu that was "International" yet distinctive South Louisiana!
OUR MENU:
Romaine Lettuce and Tomatoes with "Italian" WOP Salad Dressing
Homestyle "Delta" Potato Salad
"Cajun" Throwdown Chicken and Sausage Jambalaya
Shrimp "Creole" with Long Grain Rice
Buttered "French" Bread
"Choctaw" Corn Macque Choux
In the cold of South Louisiana weather these guys and gals ate outside!
And ya know, it never ceases to amaze me..... The most popular dish was the WOP Salad!! One guy told me he doesn't like salads, but he came back for thirds..... and wanted my recipe. Soooooo, there tis!
