"Heart Healthy" Cajun and Creole Cooking


with Chef Emile cooking demonstration and lunch

Join us on Wednesday, July 23 at the PAC for an entertaining and educational 
cooking demo, guest speaker and fabulous lunch!

Come learn how to prepare authentic Cajun and Creole food in a healthy way by reducing 
salt, fat and calories - yet still maintaining that South Louisiana flavor! 
This special cooking demo will be hosted by Chef Emile Stieffel, III from 
New Orleans who is very entertaining and recently appeared on "Throwdown 
with Bobby Flay - The Best of the Bayou." A complete "heart healthy" meal 
will be included.
 

Luncheon Menu

Mixed Green Salad with Marinated Asparagus and From Scratch Remoulade Dressing

Heart Healthy Chicken and Turkey Sausage Cajun Jambalaya

Pan Seared Fresh Vegetables with Sesame Seeds

Pesto and Garlic French Bread

Fresh Fruit Compote with Cane Syrup

Fresh Tea with Muddled Mint

Because another speaker ran a little long, we only had 45 minuets to prepare the entire meal for everyone (60 people!!); it went off without a hitch!!

 

 

Laurent and I cooked everything in front of them while informing the group on how to make the dishes "Heart Healthy" by removing fats and salt.Chef Laurent answering questions.

 

I think the most popular dish was the pan seared beans with marinated baby corn on the cob.
