Boiled Corn and Potatoes
Baby red potatoes and cobettes are boiled right along side the seafood, soaking
up all those Cajun seasonings.

Boiled Crawfish
South Louisiana's most unique food is the lowly crawfish, but most natives will
tell you that there is nothing better then hot boiled crawfish. Our cooks
season the boiling water with onions, garlic, celery, lemons, and of course,
cayenne pepper. We cook the crawfish to perfection then let them soak to
absorb all of our Cajun seasonings.

Boiled Gulf Shrimp
We hand select our shrimp direct for the trawlers to insure the freshest and
highest quality shrimp. Our cooks boil the shrimp to just when the meat
releases form the shell then allow them to soak with lemons, cayenne and other
boiling seasonings.

Boiled Hot Dogs and Smoked Sausage
Many South Louisianans know that a great use of boiling crawfish water is to
add some of your favorite hot dogs and smoked sausage and make a Cajun Dog,
C'est si bon!

Boiled Lake Crabs
Large blue point lake crabs are selected, then boiled with onions, garlic,
celery and our crab boil seasonings. Many Cajuns will tell you that there is
no finer seafood than the backfin meat of a lake crab.

Fried Gulf Shrimp
We select only the finest Louisiana Gulf Shrimp and lightly batter them with
our special blend of Cajun seasonings and corn flour. We deep fry the shrimp
in peanut oil to a golden brown.

Golden Fried Catfish
Cajuns have long been known for their fried fish batters and our Chef's blend
of seasonings and batter produce a golden crisp coating on a tender filet of
farm raised and grain fed catfish. We will also supply plenty of lemons and
ketchup for condiments.

fresh fish.

Oyster Bar
Louisiana oysters have long been sought after for stuffings and sauces,
however, the true connoisseur of the oyster will eat it raw right out of the
shell. We present our oysters on the half shell with a bed of crushed ice and
plenty of cocktail sauce and crackers.

Our station is highlighted with an antique pirogue filled with
crushed ice and plenty of cocktail sauce,

Stuffed Crabs
White crab meat, onions, celery, shallots and bread crumbs are seasoned with
our Cajun seasonings then stuffed in real crab shells for your enjoyment.
