Bamboo Skewers of Chicken and Beef
Marinated strips of chicken and beef are skewered with onions, sweet peppers,
and pineapples. The skewers are grilled over an open fire for flash cooking
and enjoyment.

Bar-B-Que Beef Sandwiches
Chipped beef has always been a favorite of the Old West chuckwagon meals,
we supply ours with plenty of homemade BBQ sauce and our own smoke/roast
beef served on a fresh hamburger bun. Get along little doggie!!!!.

BBQ Smoke/Roast Beef
We slow roast our beef with pecan woods and house seasonings to lock in all the
natural juices then glaze it with our special Bar-B-Que Sauce.

Chuckwagon Style Bar-B-Que Chicken
We dust fresh chicken quarters with our own blend of Cajun seasonings, and fire
the pit with charcoal and pecan wood. The chickens are roasted over a hot fire
and drowned in Bar-B-Que sauce. The secret is our pit, because the half inch
steel doors are lowered to hold in the heat while grilling. Circle the wagons
and ring the bell because it's chow time.

Couchon Du Lait (Roast Suckling Pig)
A true Cajun delicacy, a young pig stuffed with garlic and shallots, then slow
roasted in our pit and done to perfection. We are very proud of our third
place finish in the 1988 Louisiana Bar-B-Que Championships in the "Whole Hog"
division.

Aurora Catering's Hot Dogger
Order your 100% pure beef hot dog plain or "drug through the garden" from our
hot dog vending cart. Our cart is completely self contained with separate
heating units for keeping chili and hot dogs hot while also steaming buns.
So enjoy a great dog fixed with onions, cheese, relish, mayo, mustard, chili,
and even jalapeno peppers. Our colorful red and white umbrella will lead you
to where the action is!

Custom Hamburgers
Quarter pound - 100% pure ground beef is the basis for our BBQ hamburgers, we
include: buns, cheddar cheese, chopped onions, catsup, mayo, yellow mustard,
lettuce and tomatoes.

Grilled Andouille Sausage
Laplace Louisiana just west of New Orleans is the Capital of the World for that
ham filled smoked sausage called Andouille. We grill our Andouille and serve
it with bell peppers and onions.

Grilled BBQ Sausage
We charbroil both a hot smoked beef sausage and a mild smoked pork sausage then
smother them in our special BBQ Sauce.

Grilled Chicken Breast
We take a boneless/skinless breast of chicken and marinate it in our house
seasonings, olive oil, tarragon vinegar and parsley then grill it over an open
fire.

Grilled Fresh Fish
We purchase only the freshest of Gulf fish from our many suppliers, depending
on the season, we look to acquire such unique fish as shark, amberjack, tuna,
puppy drum, and sword fish. The fish are expertly filleted then dusted with
seasonings and grilled on our charbroiler.

Grilled Italian Sausage
Fresh lean Italian sausage are grilled over hot coals. Our Italian sausage is
lightly seasoned with anise and the charcoal grilling gives our sausage that
outdoor flavor.

Hawaiian Chicken
We marinate young chickens in brown sugar and vinegar then they are roasted in
our pit with banana leafs and our homemade Hawaiian BBQ Sauce.

Hot Dogs and Chili
The American Classic, a pure beef hot dog, bun, mustard, sweet relish, cheddar
cheese, and spicy chili make this the perfect picnic companion.

Smoke/Roast Chicken
We dust our chickens with a special blend of house seasonings, then they are
slow roasted for eight to ten hours in a rich pecan smoke. We are very proud
of our third place finish in the 1988 Louisiana State Bar-Be-Que Championship.

Smoke/Roast Ducklings
Young ducklings are slow roasted in our pit with the finest pecan woods and
seasoned with our special house seasonings.

Smoked BBQ Pork Ribs
We remove the silver skin (something that most chefs do not do) then dust our
pork spare ribs with our house seasonings and slow smoke them with pecan wood
until done to a juicy tenderness. Our recipe took 4th place in the 1988
Louisiana State Championship Competition.

Smoked Beef Bar-B-Que Ribs
Meaty beef ribs are cut into short ribs then seasoned with our selected
herbs and spices. We slow smoke the ribs using pecan wood for that rich
nut like flavor. We will supply plenty of napkins so don't worry about
getting those pinkies full of our homestyle BBQ sauce.

South Seas Style BBQ Ribs
Slabs of baby back ribs are marinated in mushroom soy and "Char Siu" (the dark
red Hawaiian style BBQ sauce). The ribs are seared over hot coals and basted
with the marinade.

Texas Style Smoked/Roasted Side of Beef
Hoooooowdy Pardner! Hitch up your horse and gather round the campfire, cause
Cooky's cokkin up an entire side of Beef. We only use USDA choice
graded beef and season it with our own blend of Southwest Texas
spices. Garlic, Ground Chile Powder and Cumin are just a few
spices to our secret blend of Southwest flavor. It is slow-
roasted over Pecan-Wood in our 7' Pit Grill on wheels.

The Custom House
Three quarters of a pound of charbroiled boneless sirloin, marinated in
selected seasonings, mushroom soy, scotch, and other ingredients.
