Fresh Garlic Toes and ChopperAurora Catering's

Minced Fresh Garlic
Yield - about 6 Pounds

Ingredients
5 LBS FRESH WHOLE GARLIC TOES (Peeled)
2 CUPS EXTRA VIRGIN OLIVE OIL
LOT- JUICE FROM 2 FRESH LEMONS

LOT KOSHER SALT
6 -7 - 1 LB SCREW TOP ZIPLOC CONTAINERS

Lemon Sueeze and GarlicMethod

Use an electrical hand chopper or other kitchen mixer, fill the chopper with garlic to about 1/2 way.  Add 1 TBSP of Extra Virgin Olive Oil, 2 TSP Lemon Juice and 1/2 TSP Kosher Salt.  Mince the garlic into fine pieces but NOT over chop to a paste.  Add the minced product to the storage containers and continue to fill as needed.

 

Store the containers in the freezer for future use.

When serving, warmed butter can be combined to the garlic and served on a buffet station.

Plate Presentation
Serve chilled with Warmed French Bread.


Chef's Notes:
Use this garlic in lieu of granulated garlic whenever possible.  The Kosher salt is important, it will help grind the garlic, add nutrients and flavor.

 

BTW, I found the 5 lb container on sale at our local Restaurant Depot for $11.  WHAT a DEAL!!
