What Can I Do with
Pickled Jalapeño Pepper Vinegar??
Yield - Little over 1 CUP
This is a little different recipe format, I want to make sure you check out these Chef's Notes!
First and foremost is the Silver Spring Chipotle Mustard, this is chosen because of the distinct smoky flavor from the chipotle peppers. I find that an addition of a smoked flavor greatly enhances smoke/roasted chicken or pork. And the horseradish component of the mustard gives the dippin' sauce the kick that the meat needs also! YET, it still allows for the flavors of the meat to prevail.
Steen's Dark Molasses gives the sauce a sweetness, along with the dark roasted flavors of Louisiana Sugar Cane. Finally, the jalapeno and grapefruit juices give the sauce a true acid balance. Try this recipe, you are going to love it!!
4 TBSP SILVER SPRING CHIPOTLE MUSTARD
3 OZ PICKLED JALAPEÑOS PEPPER JUICE (The vinegar and seasonings from jalapeno nacho peppers)
2 OZ STEEN'S DARK MOLASSES
2 OZ FRESHLY SQUEEZED GRAPEFRUIT JUICE
2 PASTEURIZED EGG YOLKS
In a small stainless steel whisk the ingredients until you get a fine emulsion, about 30 seconds...THAT'S IT!!
Serve with either smoke/roasted chicken or pork!
