I was doingChaudin, Tasso, and Chaurice Sausage a lot of station work, so I didn't get many pics.  BUT, these are really cool.  They are of my Cajun meat carving station!  Shown are the Cajun Chaudin, Tasso, and Chaurice Sausage.  Also at the top of the carving board is our Fresh Basil and Mozzarella Tomato Cristini.   Those were a BIG hit because it was an unusually warm May day.

Fried Soft Shell Crabs, Mini Crawfish Pies

Entrees:

Pan Seared Filet Mignon Cubes with Creole Mustard and Merlot Reduction

Coconut Cream and Yellow Curried Meatballs and Chicken with Penne Pasta

Creamy Cheesy Grits

Country Corn Macque Choux
